Recipe of Doli ki Roti
Doli ki Roti is a typical and well known Multani dish. It is a roti made from fermented ata and the recipe is quite elaborate and laborious to make. It is often stuffed with Dal or other item. Once made it can last for even 15 days without getting spoilt.
Hence it is said it was given to a bride to carry with her in her doli to the husband's house and would provide her sustenance during the travel as well as the initial days in her husband's house in case she was hungry but shy to ask for food.
Nowadays it is very difficult to find this item except in the very few Multani homes where it is still made. I am not aware of any shop in Mumbai that makes it. In Delhi I know of 1 shop which makes it from April for a few months and they told me they have a lot of orders from Mumbai.
The recipe given here is on a letter which is approximately 50 or more years old, based on the name of the addressee (Sheila Bagai) who was my maternal grandfather's cousin. I have recipes of Doli ki Roti from my mother as well as my mother's brother's wife ie my Mami Swaran Ahuja and I intend to add these here too soon
